The Recipe

Ingredients:

For the Fruit Filling:

  • 1 big apple (around 250g)/ peeled
  • 1 tbsp maple syrup 
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • ½  tsp vanilla extract

For the Crumble Topping:

  • 60g gluten-free rolled oats
  • 45g almond flour
  • 15g chopped nuts (almonds, walnuts, or pecans)
  • 2 tbsp coconut oil 
  • 1 tbsp nut butter (e.g. almond, hazelnut)
  • 1 tsp cinnamon
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Peel and chop the apples into bite-sized pieces.
  3. In a bowl, toss the fruit with maple syrup, cinnamon, lemon juice, and vanilla extract.
  4. Spread the fruit mixture evenly in a baking dish.
  5. In a separate bowl, mix the oats, almond flour, chopped nuts, cinnamon, and a pinch of salt.
  6. Add the coconut oil and maple syrup, mixing until the mixture becomes crumbly.
  7. Evenly spread the crumble topping over the fruit layer in the baking dish.
  8. Place the dish in the oven and bake for 20-25 minutes, or until the fruit is soft and the topping is golden brown.
  9. Let it cool for a few minutes before serving. Personally, I find it especially delightful with plant-based yogurt or skyr – both with natural taste.
