The Recipe

Ingredients:

  • 400g broccoli florets chopped
  • 200g tomato sauce – 
  • 30g mozzarella, shredded 
  • 40g pecorino Romano  (half a cup) 
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ black pepper

For Toppings:

  • 60g pizza salami
  • 40g fresh mozzarela
  • ⅓ oregano

Introduction:

  1. Finely chop the broccoli (it can also be placed in a blender, but it’s not necessary). For the best results, try to cut the broccoli florets the same size to ensure they cook evenly. 
  2. Mix it with shredded mozzarella, Parmesan cheese, garlic powder, salt, and black pepper. Stir well..
  3. Transfer the mixture onto a baking sheet lined with parchment paper and shape it into pizza crusts.
  4. Bake in a preheated oven at 180 degrees Celsius until lightly browned.
  5. Once baked, spread tomato sauce on top and add desired toppings.  I chose chorizo and fresh mozzarella for a simple and classic flavor, aiming for a melty, cheesy texture. Also, you can use your own mix of dried oregano, basil, thyme, sage, and rosemary or go ahead and get creative with whatever blend sounds best to you. Sprinkle with the herbs of choice and bake in the oven at 200C until the toppings are cooked through. Enjoy. 

 

Note: Instead of Pecorino, you can use Parmesan cheese, but don’t skip it, as it adds nice, salty and nutty flavour to your crust. And be cautious not to overeat broccoli, as it might cause bloating, haha. 

Swaps & Variations

  • Cheese: Pecorino Romano can be replaced with Parmesan. For a lighter choice, use part-skim mozzarella, or go for nutritional yeast if you want a vegan alternative.
  • Toppings: Swap salami for turkey slices, grilled chicken, or keep it vegetarian with mushrooms, zucchini, or bell peppers.
  • Sauce: Instead of tomato sauce, try pesto, homemade marinara, or even a creamy white sauce for variation.
  • Herbs: Oregano is classic, but you can also use basil, thyme, rosemary, or sage—or mix them together for extra flavor.
