The Recipe

Ingredients
For the crust:
- 800 g raw cauliflower, cleaned and cut into small florets
- 3 eggs
- 140 g coarsely grated cheese
- ½ bunch dill, finely chopped
- 1 large garlic clove, crushed
- Fine sea salt, to taste
- Butter or oil, to grease the baking tray
For the topping:
- 1 cup tomato sauce (made from 600 g peeled blended tomatoes, 3 garlic cloves, 1 tsp dried oregano, ½ tsp sugar, salt to taste, and 2 tbsp oil, or use store-bought)
- 1 medium red bell pepper, sliced into thin rings
- 10 olives, sliced
- 3 hard-boiled eggs, sliced
- 130 g grated cheese
Instructions
- Process the cauliflower in a food processor or grate it finely. Place in a large bowl, sprinkle lightly with salt, set aside, and drain if liquid is released.
- Heat oil in a saucepan, add crushed garlic, cook for 10 seconds, add blended tomatoes, oregano, sugar, and salt. Simmer covered for 10 minutes until slightly thickened.
- Add chopped dill and grated cheese to the cauliflower. Whisk eggs with crushed garlic and a little salt in a separate bowl, then mix into the cauliflower mixture.
- Line a 43 x 33 cm baking tray with baking paper and grease lightly. Spread the mixture evenly, press down to form a thin layer, and bake at 190°C (375°F) for 30 minutes until golden and cooked.
- Remove from the oven, spread tomato sauce, arrange sliced eggs, olives, and bell pepper. Bake for 10 minutes.
- Sprinkle with grated cheese and bake until melted and golden.
- Serve warm, sliced.
Serving Suggestions
This pizza is delicious warm out of the oven, but it also makes great leftovers. Pair it with a fresh green salad for a light dinner, or enjoy a slice as a protein-rich snack during the day.
