
Chicken-Zucchini Meatballs

My meal-prep recipe – especially during zucchini season – can easily be paired with a variety of side dishes to create balanced, versatile meals throughout the week.
Ingredients & Their Benefits
- Ground chicken – Lean protein, lower in fat than other meats.
- Zucchini – Adds moisture, fiber, and vitamins without extra calories.
- Feta cheese – Creamy texture with a tangy flavor and calcium.
- Onion & garlic – Natural flavor enhancers with immune-supporting properties.
- Fresh dill (or parsley) – Adds freshness and antioxidants.
- Lemon zest – Brightens flavor and adds vitamin C.
- Breadcrumbs – Bind the meatballs and add light texture.
- Salt, pepper, garlic powder – Season and enhance all flavors naturally.
The Recipe

Ingredients
- 450 g ground chicken
- 1 medium zucchini, grated (no need to press out excess moisture)
- ½ cup breadcrumbs
- ½ cup crumbled white cheese
- ⅓ cup onion
- 2 tbsp finely chopped fresh dill (or parsley)
- 1 tsp lemon zest
- ¾ tsp kosher salt
- ¾ tsp garlic powder
- ½ tsp black pepper
- Coconut oil for cooking
Instructions
- In a large bowl, combine all ingredients from ground chicken through black pepper. Use your hands to thoroughly mix and mash the mixture together.
- Scoop and roll the mixture into 24 mini meatballs. If the mixture sticks while rolling, moisten your hands with a little water or olive oil.
Heat 1–2 tbsp of oil in a large skillet over medium heat. Add half of the meatballs and cook until golden, turning to brown all sides, about 6–8 minutes. Transfer to a plate and repeat with the second batch, adding more oil if needed. - Serve warm with tzatziki sauce and pita bread.
Tip: Bake at 190°C (375°F) for 20–25 minutes instead of pan-frying for a lighter version.
These chicken-zucchini meatballs are great served with warm pita and tzatziki for a Mediterranean-style plate, paired with roasted vegetables or a fresh side salad for a balanced meal, or added to wraps and grain bowls for a quick and satisfying lunch or dinner.
