When the summer heat hits hard, I always crave something cold, refreshing, and a little indulgent. These bites are one of my favorite quick snacks to make on those hot, hot days. They’re creamy on the inside, coated in rich dark chocolate on the outside, and packed with protein and antioxidants thanks to the Skyr (or regular yogurt) and juicy frozen cherries. Ingredients
- 400 g Skyr (or regular yogurt)
- 150 g frozen cherries (or other frozen berries)
- 1 tsp raw cocoa powder
- 1–2 tbsp maple syrup or honey
- 1 scoop vegan protein powder (optional)
- ½ tsp vanilla extract
- 200 g dark chocolate (70–80%)
Instructions
- In a bowl, combine all ingredients except the chocolate and mix well.
- Line a baking tray or plate with parchment paper.
- Using a spoon, shape the yogurt mixture into bite-sized balls and place them on the parchment paper.
- Freeze for at least 3 hours, until the bites are firm.
- Melt the dark chocolate using a double boiler (or microwave in short intervals).
- Remove the bites from the freezer and quickly dip each one into the melted chocolate, working fast so the yogurt doesn’t melt.
- Place the coated bites back onto the parchment paper and return them to the freezer until the chocolate is set.
- Store in the freezer until ready to enjoy. For the best texture, keep them frozen.
