Ingredients

  • 100g Whole grain brioche buns (2 psc)
  • 200g Boneless skinless chicken breasts
  • Lettuce

For coating:

  • 1 egg white
  • 100g Cornflakes

For the sauce:

  • 60g Low-fat mayonnaise
  • 10g Dijon mustard
  • ½ Lemon juice

Spices:

  • Smoked paprika
  • Garlic powder
  • Onion powder

Instructions

  1. Begin by washing and gently pounding the chicken fillets. Season them with aromatic spices such as smoked paprika, garlic powder, onion powder, black pepper, and salt.
  2. Crush the cornflakes into small pieces and mix them with the same selected spices.
  3. Dip the chicken fillets in beaten egg white, then coat them evenly with the crushed cornflakes mixture.
  4. Place the coated fillets on a baking tray lined with parchment paper and bake them until they develop a golden caramelized crust in a preheated oven at 200°C (400°F).
  5. While the chicken is baking, prepare fresh lettuce leaves, which will add crunch and freshness to your burgers.
  6. For the sauce, mix mayonnaise with Dijon mustard, fresh lemon juice, garlic and onion powder until you achieve a fragrant and dense texture.
  7. Generously spread this delicious sauce on the burger buns, then layer on the lettuce and the crispy chicken fillet.

 

Tip: For a lower-calorie version, you can use whole-grain buns instead of brioche.

Note: You have the option to substitute cornflakes with spelt flakes. Naturally, the amount of fiber in cornflakes is lower compared to wheat flakes. Additionally, choose the ones without added sugar.
