Spicy Pan-Seared Chicken

~Asian-Inspired Meal Prep~

Another great meal-prep option, this time with an Asian twist. It’s got a nice kick of spiciness – not too crazy-along with a balanced sweet, savory, and tangy flavor, finished off with a hint of sesame to round everything out.

The Recipe

Ingredients

  • 225 g chicken breast
  • 2 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • ¼ lime, juiced
  • 1 tbsp soy sauce
  • ½ tbsp honey
  • ½ tsp oregano
  • ½ tsp cumin
  • 1 tsp chili powder
  • 1 tsp of sesame

Instructions

  1. In a bowl, combine the garlic, olive oil, soy sauce, lime juice, honey, oregano, cumin, and chili powder. Stir well to make a thick marinade.
  2. Cut the chicken breast into cubes, rinse, and pat dry. Add the chicken to the marinade and mix until evenly coated. Cover and refrigerate for at least 1 hour.
  3. Heat a dry pan over medium-high heat. Add the marinated chicken along with the marinade.
  4. Cook for about 10 minutes, stirring occasionally, until the chicken is golden and fully cooked through.
  5. Add sesame and serve hot with your favorite side dish.

Swaps

  • Protein swap: use turkey, shrimp, or tofu.
  • Sweetness: swap honey with maple syrup.
  • Extra heat: add chili flakes or fresh chopped chili.
  • Herbs: fresh coriander or parsley can be added for garnish (unless you’re like me and coriander is a no-go, haha).
