Ingredients

- 4 bell peppers, seeds removed
- 1 cup half-cooked brown rice
- 400 g lean ground turkey
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp chili powder
- ½ cup shredded cheese (optional)
- Salt & black pepper, to taste
Instructions
- Preheat the oven to 190°C (375°F).
- In a large skillet, cook the ground turkey with onions and garlic until browned.
Stir in the cumin, paprika, chili powder, half-cooked brown rice, salt, and pepper. Cook for another 2–3 minutes to combine. - Stuff the bell peppers with the turkey-rice mixture and place them in a baking dish.
- Cover with foil and bake for 25–30 minutes, until the peppers are tender.
- Optional: Sprinkle shredded cheese on top of each stuffed pepper and bake for an additional 5 minutes, until melted.
- Serve warm with a side salad or steamed vegetables.

Serve with a fresh side salad, pair them with roasted or steamed vegetables to make a full, balanced meal, or I always add a dollop of plain yogurt or tzatziki on the side.
