The Recipe

Ingredients:

  • 2 cups gluten free rolled oats
  • ½  cup dried mango, chopped
  • ½  cup dried pineapple, chopped
  • ¼  cup dried papaya, chopped
  • ¼  cup shredded coconut
  • ¼  cup macadamia nuts, chopped
  • 2 tbsp honey or maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • ½  tsp sea salt

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. In a large bowl, mix oats, shredded coconut, and macadamia nuts.
  3. In a separate bowl, whisk together honey, melted coconut oil, vanilla extract, and sea salt.
  4. Pour the wet mixture over the dry ingredients and stir well to coat.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes, stirring halfway through, until golden brown.
  7. Let the granola cool, then mix in the dried mango, pineapple, and papaya.
