
Protein Cake with Bisquits

This treat is perfect whenever you’re craving something sweet but want it to be healthy. It’s ready in just 15 minutes and works wonderfully for weekdays, special occasions, or even when you want a personal indulgence. If you’re making it just for yourself, you can halve the ingredients.
Ripe apples bring natural sweetness and moisture to the dessert, while cinnamon adds a warm, comforting flavor. Nuts contribute a satisfying crunch and healthy fats, making this dessert more filling and nutritious. Coconut sugar adds a subtle caramel-like taste that balances the flavors without making it overly sweet.

Ingredients
For the apple layer:
- 2 medium apples
- 3 tbsp coconut sugar
- 1 tsp cinnamon
- 70 g nuts
- 250 g sugar-free biscuit cookies
- 50 ml plant-based milk
- 10 g dark chocolate (70%)
For the cream:
- 800 g plain Icelandic skyr
- 4 tbsp coconut sugar
- 1 scoop protein powder
- ½ tsp vanilla extract
Instructions
- Peel and grate the apples into a bowl. Drain excess juice if necessary, then add coconut sugar, cinnamon, and chopped nuts. Set aside.
- In a separate bowl, mix the skyr, coconut sugar, protein powder, and vanilla extract until smooth and creamy.
- Lightly dip each biscuit in the plant-based milk and layer them at the bottom of a cake pan.
- Spread a layer of the apple mixture on top, followed by a layer of the skyr cream.
- Repeat the layers (usually twice with these quantities), finishing with a layer of cream on top.
- Sprinkle grated chocolate on the top.
- Place the cake in the fridge for 2–3 hours so the biscuits soften and the flavors meld.
Tips
- If you’re using flavored protein powder (like vanilla), you can skip the vanilla extract. You can also reduce the sugar in the cream to taste if your protein powder is sweetened.
- I chose Icelandic skyr for the cream because it’s creamy, high in protein, and low-fat or even fat-free. With about 10–12 g of protein per 100 g, it’s perfect for anyone looking to increase protein intake.
