Salty Peanut Snack (High-Protein Recipe)

You can prepare it in advance, store it in your fridge, and have a satisfying, high-protein snack on hand whenever you need a little fuel.

The Recipe:

Yield: 12 servings | Serving size: 1 square/bar | Prep time: 10 minutes | Cook time: 5 minutes | Chill time: 3-4 hours

Tips for Success

  1. Blend the peanuts thoroughly for the smoothest texture.
  2. Use low heat when melting the chocolate to prevent it from seizing.
  3. Line your mould with parchment paper for easy removal.
  4. Sprinkle flaky sea salt on top before chilling for extra crunch and flavour.
  5. For a firmer texture, freeze the bars for 20 minutes before serving.

Ingredients:

  • 140g salted peanuts
  • 300g coconut cream (22%)
  • 150g dark chocolate (70%)
  • 30g unsweetened protein powder
  • 1-2 tbsp maple syrup
  • Drizzle of peanut butter (natural with no added sugar)

Instructions:

  1. Place the salted peanuts and coconut cream in a blender and blend until smooth and homogeneous.
  2. Pour the mixture into a saucepan and add the dark chocolate (broken into pieces), honey, and protein powder.
  3. Heat the mixture over low heat, stirring until the chocolate melts and the mixture becomes smooth and creamy.
  4. Pour the mixture into a mold of your choice and refrigerate for several hours, until the dessert firms up.

Note: This recipe is high in calories, but so delicious and perfect for pre-workout snack.

Swap Suggestions

  • Peanuts: Replace with roasted almonds, cashews, or hazelnuts.
  • Dark chocolate: Swap for sugar-free chocolate to reduce sugar.
  • Protein powder: Vanilla, chocolate, peanut butter, whey, or plant-based protein all work well, just mind the sweetener.
  • Maple syrup: Replace with, agave syrup, or date syrup.
  • Peanut butter drizzle: Try almond butter, cashew butter, or tahini, but make sure there is no added sugar and it’s 100% nuts.
