What is Skyr?
Skyr is a traditional Icelandic dairy product that resembles yogurt but is thicker, creamier, and higher in protein. It’s made from skimmed milk and live cultures, giving it a smooth texture and a naturally tangy flavor. Unlike regular yogurt, skyr is low in fat but packed with protein, making it perfect for recipes where you want a creamy texture without adding extra calories. Its thick consistency also helps dips like tzatziki stay rich and creamy without becoming watery.
Ingredients
- ½ cup finely grated cucumber
- 1 cup high-protein plain skyr
- 1 tbsp fresh lemon juice
- ½ tbsp extra-virgin olive oil
- 1 garlic clove – grated
- ¼ tsp salt
- 1 tbsp fresh dill – chopped
- 1 tbsp fresh mint – chopped
Instructions
- Place the grated cucumber on a clean towel and gently squeeze out any excess water.
- In a medium bowl, combine the cucumber, skyr, lemon juice, olive oil, garlic, salt, dill, and mint (if using).
- Mix well and chill until ready to serve.
