Lean Turkey Sandwich with Honey Mustard

If you work out like me, then you’re always aiming for lean meat to hit your protein goals. This sandwich is great for lunch at the office (perfect for meal prep) or for breakfast to start your day with something balanced – lean protein, carbohydrates, fibre, and healthy fats.

I’m also making it for my next flight because it’s balanced and definitely better than most airport food. Aaand if you’re trying to hit your protein goals… 50 grams of protein, hellooooo? 😄

Turkey might end up a bit dry in the oven, but the dressing and tomato fix that. You can also shred the turkey instead of slicing it – it blends really well with the dressing.


The Recipe

Servings: 1 | Prep Time: 10 minutes | Cook Time: 25 minutes

Ingredients

For the Turkey:

  • 170 g turkey breast
  • 1 tsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper

For the Sandwich:

  • 2 slices whole-grain bread
  • 2 slices tomato
  • 15 g lettuce
  • ¼ avocado, sliced

For the Honey Mustard Dressing:

  • 3 tbsp mustard
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Place the turkey breast on a parchment-lined baking tray. Season with salt and black pepper, then drizzle with olive oil.
  3. Bake for 20–25 minutes, depending on the thickness of the turkey, until the internal temperature reaches 75°C (165°F).
  4. Remove from the oven and let the turkey rest for 5 minutes before slicing.
  5. Meanwhile, prepare the honey mustard dressing by whisking together mustard, honey, apple cider vinegar, salt, and black pepper.
  6. Slowly drizzle in the olive oil while whisking until the dressing becomes smooth and creamy. Adjust the flavour if needed.
  7. Toast the bread if desired, then spread the honey mustard dressing on both slices.
  8. Layer the sandwich with sliced turkey breast, tomato, lettuce, and avocado.
  9. Close the sandwich and slice in half.
