Bell Pepper Egg Rings with Fresh Avocado Salsa

If you love a classic fried egg but want to make breakfast a little more fun, these bell pepper egg rings are an easy upgrade. Colorful bell pepper rings create a natural little frame for each egg, giving you perfectly portioned servings with crispy edges and a soft, golden yolk.

The real star, though, is the fresh avocado salsa. Creamy avocado, juicy tomatoes, zesty lime, red onion, and a little jalapeño come together for a bright topping that balances the richness of the eggs beautifully.

It’s quick enough for a weekday breakfast, but colorful enough to bring to the table for a relaxed weekend brunch. It’s also a fun way to present breakfast to kids, turning simple eggs and vegetables into something playful and exciting. Serve it with whole-grain toast, fresh greens, or simply enjoy it on its own for a protein-rich start to the day.

 


The Recipe

Prep time: 10 min | Cook time: 5 min | Servings: 1

Ingredients:

  • 2 bell peppers (any color)
  • 4 large eggs
  • 1 tsp olive oil
  • Salt & black pepper, to taste
  • ½ cup red onion, diced
  • 1 jalapeño, minced
  • 2 tomatoes, diced (seeds removed)
  • 1 avocado, diced
  • ½ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Pinch of  salt (or to taste)

Instructions:

  1. Start by making the avocado salsa. In a bowl, combine red onion, jalapeño, tomatoes, avocado, cilantro, lime juice, and salt. Mix gently and set aside.
  2. Slice the tops and bottoms off the bell peppers, then cut them into thick rings (about 1–2 cm). Remove seeds and membranes.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Place bell pepper rings in the pan and crack 1 egg into each ring. Season with salt and black pepper.
  5. Cook for 2–3 minutes until the whites are mostly set, then carefully flip and cook for another 1–2 minutes depending on yolk preference.
  6. Repeat if needed with remaining peppers and eggs.
  7. Serve warm with avocado salsa on top or on the side. Garnish with extra cilantro if desired.
