Spicy Pan-Seared Chicken
~Asian-Inspired Meal Prep~
Another great meal-prep option, this time with an Asian twist. It’s got a nice kick of spiciness – not too crazy-along with a balanced sweet, savory, and tangy flavor, finished off with a hint of sesame to round everything out.
The Recipe
Ingredients
- 225 g chicken breast
- 2 tbsp olive oil
- 2 garlic cloves, finely chopped
- ¼ lime, juiced
- 1 tbsp soy sauce
- ½ tbsp honey
- ½ tsp oregano
- ½ tsp cumin
- 1 tsp chili powder
- 1 tsp of sesame
Instructions
- In a bowl, combine the garlic, olive oil, soy sauce, lime juice, honey, oregano, cumin, and chili powder. Stir well to make a thick marinade.
- Cut the chicken breast into cubes, rinse, and pat dry. Add the chicken to the marinade and mix until evenly coated. Cover and refrigerate for at least 1 hour.
- Heat a dry pan over medium-high heat. Add the marinated chicken along with the marinade.
- Cook for about 10 minutes, stirring occasionally, until the chicken is golden and fully cooked through.
- Add sesame and serve hot with your favorite side dish.
Swaps
- Protein swap: use turkey, shrimp, or tofu.
- Sweetness: swap honey with maple syrup.
- Extra heat: add chili flakes or fresh chopped chili.
- Herbs: fresh coriander or parsley can be added for garnish (unless you’re like me and coriander is a no-go, haha).
