
Banana Pancakes with Hazelnut Drizzle
I love making these pancakes during my luteal phase, especially on days when I don’t feel like eating “just eggs” for breakfast. They are a delicious way to switch things up while still getting a good amount of protein.
The pancakes are naturally high in protein thanks to the egg and protein powder. If you don’t use protein powder or simply don’t like it, you can still increase the protein content by adding two extra egg whites. Just keep in mind that you may need to adjust the dry ingredients slightly so the batter doesn’t become too runny.
And of course, don’t forget a couple of drops of vanilla extract
I love having these pancakes with my favourite homemade granola. If you’ve been following me for a while, you already know this is a BIG obsession of mine. And of course, I can’t forget the nut butters – especially my favourite (and probably the most expensive one :D), hazelnut tahini. It’s the perfect finishing touch alongside some fresh banana slices.
The Recipe:
Servings: 1 | Prep Time: 5 minutes | Cook Time: 15 minutes
Ingredients
For the Pancakes:
- 1 large egg
- 4 tbsp rolled oats
- ½ ripe banana (half for topping)
- 250 ml oat milk
- 25 g vanilla protein powder (or your favourite protein powder)
- 1 tsp vanilla extract
- 1 tsp baking powder
For Serving:
- Hazelnut tahini drizzle
- Homemade granola (find the recipe on my website!)
- Fresh banana slices or toppings of choice
Instructions
- Add the egg, rolled oats, banana, oat milk, protein powder, vanilla extract, and baking powder to a blender.
- Blend until smooth and creamy.
- Heat a lightly greased non-stick pan over medium heat.
- Pour small amounts of batter into the pan and cook for 2–3 minutes, or until bubbles appear on the surface.
- Flip the pancakes and cook for another 1–2 minutes until golden and cooked through.
- Stack the pancakes, drizzle with hazelnut tahini spread, and finish with a sprinkle of homemade granola.
- Serve warm and enjoy your fluffy, protein-packed breakfast.
